A Simple Sourdough Bread Recipe for Homemade Delights

This step, known as autolyse, allows the flour to absorb the water and develop gluten.

2. After the autolyse, add the sourdough starter and salt to the dough. Mix well until all the ingredients are fully incorporated. You can use your hands or a wooden spoon for this step.

3. Once the dough is well mixed, cover the bowl again and let it rest for 1 hour. During this time, the sourdough starter will start fermenting the dough, giving it its characteristic flavor.

4. After the first hour, perform a series of stretch and folds to strengthen the dough. Wet your hands and grab one side of the dough, stretching it up and folding it over the rest of the dough.

Repeat this process from all four sides of the bowl. Cover the bowl and let it rest for another hour.

5. Repeat the stretch and fold process two more times, with an hour of rest in between each fold. This will further develop the gluten and improve the structure of the bread.

6. After the final stretch and fold, shape the dough into a round loaf. Place it on a floured surface or in a proofing basket, seam side down. Cover it with a kitchen towel and let it proof for 2-3 hours, or until it has doubled in size.

7. Preheat your oven to 450°F (230°C) and place a Dutch oven or baking stone inside to heat up. Once the oven is hot, carefully transfer the proofed dough into the preheated Dutch oven or onto the baking stone.

8. Score the top of the dough with a sharp knife or razor blade to allow for expansion during baking. Cover the Dutch oven with its lid or use a large oven-safe bowl to create a steamy environment.

9. Bake the bread for 20 minutes with the lid on, then remove the lid and bake for an additional 20-25 minutes, or until the crust is golden brown.
